RECIPE

Vegetable Biryani

1.Basmati rice – 2 cups

2. Annapoorna Turmeric powder – 1/2 tbsp

3. Annapoorna Bay leaves – 2

4. Annapoorna Coriander powder – 2 tbsp

5. Beans – 12

6. Annapoorna Cardamom – 4

7.Large onion(sliced) -1

8.Garam masala powder – 1 tbsp

9. Annapoorna Chili powder – 1 tbsp

10. Annapoorna Ghee – 2 tbsp

11.Green chilies -3

12 .Inch cinnamon stick – 1

13. Ginger garlic paste – 1

14. Tomato – 1

15. Curd – ½ cup

Any vegetables of your choice

16.Carrots – 3

17. Cloves – 4

18. Cauliflower – 1/4

19. Potato – 1

20. Cup Green peas – 1/4

21. Coriander and mint leaves.

22. Oil – 1/4 cup

  1. Wash and soak 1 cup of basmati rice in water for 20-30 minutes. Drain the water and keep it aside.
  2. In a pot, heat 1/4 cup of oil and 1/4 cup of desi ghee. Add 1/2 inch cinnamon, 2 cloves, 2 green cardamom, 1 bay leaf, 1 star anise, and 1/2 tsp of. Saute for a few seconds.
  3. Add 1 thinly sliced onion and tomato saute until it turns golden brown.
  4. Add 1 tsp of ginger garlic paste, 1 slit green chilli, and mixed vegetables of your choice. Sauté for 2-3 minutes.
  5. Add turmeric powder, coriander powder 2 tsp, chilli powder 1 tbsp. Saute for 2-3 minutes.
  6. Add curd and saute.
  7. Add 2 tbsp of mint leaves, 2 tbsp of coriander leaves, and salt as per taste. Mix well.
  8. Add 3 cups of water and mix well.
  9. Add the soaked rice and mix well.
  10. Cover the pot with a lid and cook on low flame for 10-12 minutes or until the rice is cooked.
  11. Once the rice is cooked, switch off the flame and let it rest for 5 minutes.
