- Annapoorna Quinoa – 1 cup
- Oil – 2 tspn
- Ghee – 1 tsp
- Annapoorna Mustard – 1/2 tspn
- Urad dal – 1/2 tspn
- Annapoorna Cumin Seeds – 3/4 tspn
- Groundnut – 20 nos.
- Chopped onions – 2 nos.
- Chopped carrots – ¼ cup
- Green peas – ¼ cup
- Curry leaves – 6-12 leaves
- Annapoorna Turmeric Powder – 1/4 tspn
- Red chili – 1 no.
- Green Chili – 2 nos.
- Ginger – 1 tsp
- Rinse and soak the Quinoa for 5 minutes
- Steam cook it in 2 cups of boiling water and let it cool down
- Heat a pan with ½ tablespoons of oil over medium;
- Saute mustard till it sputters, then add Annapoorna Urad Dal, Annapoorna Cumin Seeds, Groundnut, Red Chillies, Green Chillies, Ginger chopped and Curry leaves, and fry the mix for 1 minute.
- Add chopped onions, chopped carrots, Green peas , add ¼ cup water; saute for two minutes and cover it with a lid
- Add a pinch of Annapoorna Turmeric powder.
- Add the cooked Quinoa to the pan and mix everything well.
- Add salt to taste.
- Cook the mixture on low heat until they are soft-cooked.
- Add Coriander leaves
- Serve with green chutney
